Winemaking Notes

Cabernet Sauvignon has long been recognised as an excellent variety in our district. The addition of Malbec adds to the complexity of the palate contributing violet, mulberry & richness, resulting in a full-bodied wine with generous chalky tannins. Twenty four months in French oak provides depth and balance to this style.

Growing Conditions

A solid, wet winter in March/April 2007 replenished groundwater and soil moisture supply to very healthy levels. This groundwater availability enabled vines to grow strong, health canopies. Very low rainfall throughout the growing period  as well as some of the highest mean monthly temperatures led to low fruit yields across the entire state. The vintage was early and short, and the subsequent fruit full of flavour concentration, colour and tannin, creating wonderful wines for ageing.

The growing season leading up to vintage saw a wet winter with rains through the spring which enabled the vintage to start with good sub-level moisture. Summer was hot and dry with a heatwave in November, which accelerated flowering and fruitset. As a result, this brought the start of vintage forward by three weeks. The hot, dry summer ensured there was no disease pressure.
Vintage started in early February, slightly earlier than average, with picking finishing in mid-April. Invariable warm days and mild evenings throughout vintage were conducive to excellent flavour, colour and berry development.

Average rainfall throughout the growing season and a warm budburst period led to an early vintage, with crops subsequently impacted by late-season frosts. Coupled with low September rainfall, yields were reduced. Wet, cold and windy flowering further reduced crops.
Late November/early December rainfall helped freshen canopies and give the vines the ability to inject extra energy in to the lower than average fruit yield. The majority of February was cooler than average, allowing gentle development of robust fruit flavours, structural tannin and deep colour. The combination of above factors creating intensely flavoured reds with great ageing potential.

Food Pairing

Cabernet Sauvignon and Malbec pair well with red meat dishes such as lamb and beef as well as mushrooms.
